Mexican home cooking is defined by its guisados: flavorful, slow-simmered dishes that fill the kitchen with warmth. These are foods meant to be eaten with tortillas and shared around the table.
In this class, we’ll prepare mole de hongos, a rich, earthy mushroom stew in a deeply aromatic, nutty mole sauce. It will be served with its essential accompaniments: frijoles de olla, arroz rojo, freshly made corn tortillas, and sweet plantains with cream and cheese for a comforting, home-style finish.
