La cucina italiana: The classic Italian cuisine
A menu between Milan and Rome

This course takes you into the world of classic Italian cuisine. Together we will cook a traditional Italian menu consisting of creamy risotto alla milanese with gremolata alle acciughe (or without acciughe), saltimbocca alla romana with patate arrosto and verdure di stagione as well as classic tiramisù.
It's not just about recipes, but also about the philosophy of Italian cuisine: few ingredients, good products and careful preparation. You will get to know the classic Italian menu sequence and learn why simplicity is often the key to good food in Italy.
Menu:
- Risotto alla milanese con gremolata alle acciughe - Creamy saffron risotto with anchovy gremolata (optional without anchovies)
- Saltimbocca alla romana con patate arrosto e verdure di stagione - thin veal with Parma ham and sage, served with roast potatoes and seasonal vegetables
- Tiramisù
Felix Schlink
Felix is a passionate trained chef. He came into contact with Italian cuisine at a young age and learned to love good food there.
After leaving school, he moved to Italy, where he learned Italian and worked at a winery. It was there that his enthusiasm for Italian food culture and its philosophy deepened.
After his apprenticeship, his work with regional and seasonal vegetables in particular shaped his future career. Even though the kitchens were often more German-influenced, the influence of Italian cuisine was always noticeable. Today, he wants to pass on his passion for classic Italian cuisine and show that good food often consists of simplicity and shared moments of enjoyment.
