Sometimes it’s a multi-course dinner. Sometimes it’s just a single dish we can’t stop thinking about. Sometimes there’s wine. Sometimes cocktails. Sometimes both. It’s always about flavor, quality ingredients, fermentation, acidity, fat, fire, and the kind of ideas that still sound damn good at 2 a.m.
